Ingredients:
- 2 thinly sliced zucchini
- 3/4 C grated cheese
- 2 tsp. salt or flavored salt
- 4-6 tomatoes, quartered
- 1/2 tsp. pepper
- 1 more C grated cheese – sharp cheddar is good
- 1 large onion, thinly sliced
- 1 green pepper, sliced
- breadcrumbs
- butter
Directions:
Use the butter to sauté zucchini for 5 minutes. Alternate layers of zucchini, onions, green pepper, cheese, and breadcrumbs. Top with tomato wedges and bake 1 hour covered in a 350 oven. Broil until cheese bubbles.

From Sara Sellig who called it the Best Ever Zucchini casserole. But in adding these recipes from the original family cookbook, I’ve seen too many titled The Famous… or The Best Ever… so I’m pulling those titles willy-nilly style.
