Spinach Balls

Ingredients:

  • 2 10 oz. packages froze, chopped spinach
  • 2 medium onions, chopped
  • 6 eggs, unbeaten
  • 2 C herb stuffing mix
  • 1/2 C grated Parmesan cheese
  • 1/4 C butter, melted
  • 1 tsp. salt
  • 1 Tbls. garlic salt
  • 1/2 tsp. thyme

Directions:

Preheat oven to 350 degrees. Thaw spinach and place in a large sieve. Drain spinach thoroughly, squeezing out as much water as possible. Add spinach to remaining ingredients and mix well. Shape mixture into small balls. Bake on a greased cookie sheet for 20 minutes. May be frozen, then thawed 1 hour before baking.
