Irish Bread

Ingredients:

  • 2 1/2 C flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  •  1 tsp. salt
  • 1/2 C sugar
  • 1 egg
  • 1/4 C butter
  • 1 1/2 C buttermilk
  • 1 C raisins
  • 1/2 C currants
  • 1 Tbls. caraway seeds

Directions:

Sift together flour, baking powder, salt, baking soda. In a separate bowl cream together butter and sugar. Add beaten egg and buttermilk. Add liquid mixture to dry ingredients and mix only until blended. Fold in raisins, currants, and caraway seed. Pour into a 1 1/2 quart casserole dish. With sharp knife put a cross shape on top or brush top with melted butter and sprinkle with sugar. Bake at 375 for 1/2 hour. then turn oven down to 325 and bake 1/2 hour more. Alternatively, use a greased 13 x 4 x 21/2 pan and bake at 350 for 1 hour.

This is from Marion Sellig. I’m going to have to ask Dad about it because that last line about the alternative pan confuses me. Maybe it is a typo?!
