Ingredients:
- Fresh Green Beans
- Fennel
- Feta
- Bacon
- optional -fresh basil
Directions:
While cooking a few pieces of bacon in a large deep frying pan, slice the fennel bulb. When crispy, break up the bacon, set aside, and drain a bunch of the grease. Leave some grease behind for cooking the fennel which you’ll add to the pan with some water. And optionally, now add some fresh basil too. Cover and cook stirring sometimes until a little tender. Add the beans and cook until they too are just slightly tender.
Pull from the stove toss with a feta, bacon – maybe a little salt and pepper too.

This one is perfect for Thanksgiving or anytime. I always attributed this recipe to the FlyLady. You can google her if you’d like. I won’t link to her because she was rude to the awesome Janette Hillis-Jaffe. But in looking at the green bean recipe I have from FlyLady, it isn’t anything like this one which I memorized. So yeah, FlyLady has some gems worth appreciating, but her pedestal has some serious cracks.
