White Corn Salad

Ingredients:

  • 2 C shoepeg corn
  • 3/4 C chopped tomato
  • 1/2 C chopped cucumber
  • 2 Tbls. chopped green pepper
  • 3 Tbls. white wine vinegar
  • 1 1/2 tsp. olive oil
  • 1 tsp. dijon mustard
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 clove chopped garlic

Directions:

Combine vegetables. COmine all other ingredients for dressing. Pour dressing over vegetables. Chill.
