Ingredients:
- 2 C whole wheat flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/3 C ground flax
- 3 eggs
- 1/2 C packed brown sugar
- 1/4 C honey
- 1/3 C vegetable oil
- 1/3 C applesauce
- 1 tsp orange zest
- 1/3 C orange juice
- 1 tsp vanilla
- 2 C shredded carrots
- 1 C shredded zucchini
- 1/2 C raisins
- 1/2 C pecans
Directions:
Mix it all up and put the batter into muffin cups. Bake and enjoy. Feel free to substitute. Mix and match. It is a very forgiving recipe. Be sure to not go gluten-free with this recipe.
Oven Temp:
425 for 5 mins then 350 for 18 more minutes
