Rugged Garlic Dressing

Ingredients:

  • 1 egg
  • 4-6 cloves garlic finely chopped
  • 1 Tbls red wine vinegar
  • 1/4 C red wine vinegar
  • 1 C light vegetable oil
  • 1/2 C finely chopped fresh herbs (chives, scallions, parsley, basil, dill, etc)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Directions:

Skip chopping by using a blender or Cuisinart. Thoughtlessly whisk egg and mix together to enjoy with a vinaigrette consistency like I do or follow the rest of these directions and see if you can get the dressing to “take.” I tried being serious once or twice and failed so I have no idea what will happen if the dressing “takes” and I haven’t tried to find out for a decade or two. Whatever. I like it. and yes. I make Bob have some too if he plans on kissing me after I enjoy this on my salad, veggies, or in my Potato Salad.

Makes:

Approximately one cup of dressing.

From Cabbagetown Cookbook – which is you should buy but it is out of print and will take a little effort to track down. Worth the effort in my opinion. I use this cookbook more than any other three combined.
