Baked Artichoke Dip

Ingredients:

  • 1 can of artichoke hearts
  • 4 large garlic cloves
  • 1/2 C & 2 T of grated Parmesan or Romano Cheese
  • 1 T Lemon Juice
  • 1/2 C Cream Cheese
  • 1/2 C Mayo
  • 2 T Bread Crumbs

Directions:

Chop the garlic and artichokes. Mix all the ingredients except bread crumbs and pour into a shallow pie/tart pan. Sprinkle Bread crumbs on top. Baking times have varied.

Oven Temp: 375
Time: 30 mins or until hot and bubbly

From Cathy Sheffield. I heard the original came from the outside of a can of artichokes and that makes me really happy because that is how I learned lots of my first favorite meals – off the packages of food that caught my attention in the grocery store. This original recipe said to bake for 20 minutes, but we always found it needed more. My notes say 40 minutes. 30 minutes is a good compromise.
