Ingredients:
- 3 Tbls. olive oil or butter
- 3/4 C breadcrumbs
- salt and pepper
- 1/2 C warm milk
- 1 tsp. salt
- fish fillets – flounder or sole
- 2 Tbls. melted butter
Directions:
Heat olive oil or butter or both in a small frying pan. When foaming stops, add the breadcrumbs and season with salt and pepper. Toast, then drain on paper towels. Be careful! It is easy to burn the crumbs.
Pre-heat oven to 550. Put the top rack in top 1/3 of the oven. Lightly grease or oil an oven pan or sheet. Mix the milk and salt in a shallow bowl. Dip fish fillets in mil, then cover with crumbs. Place fish in pan and drizzle melted butter of the fish.
Roast for 4-5 minutes. Time depends on the thickness of the fish. This time is flounder or sole 1/4 or 3/8″ thick.
