Microwave Fudge

Ingredients:

  • 1 lb. Powdered sugar
  • 1/2 C cocoa a scant (just barely 1/2 C)
  • 1/4 C canned milk
  • 1 stick margarine
  • 1/2 C nuts
  • 1 tsp. vanilla

Directions:

Mix sugar, cocoa, milk, and margarine in a large glass bowl. Put in microwave on high 1 minutes. Remove, stir, return to microwave and on high 1 minute more. remove stir until well blended, add vanilla, and nuts. Put plastic wrap in 8 x 8 x 2 pan. Refrigerate 1 hour. Cut into squares.

From Marge Grafton. Grandma liked to keep cooking as easy as possible and was super happy Floyd liked to cook. She also appreciated modern advancements. My version of the original cookbook as the scant 1/2 C cocoa listed as cocoascant. I thought that was an ingredient! Silly. I don’t make much food via microwave, but in a pinch, this did the trick!
