- 2 1/2 C flour (ap flour? All Purpose flour!)
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 C dark brown sugar
- 1/2 C sugar
- 1 C unsalted butter, soft
- 2 large eggs
- 1 tsp. vanilla extract*
- 2 C semisweet chocolate chips
- *optional – add cut up Snickers
Directions:
Preheat oven to 350. In a medium bowl mix the flour, soda, and salt. Set aside. In a mixer combine the sugars at medium speed. Add butter and cream together on medium-high speed to form a grainy paste. (Make sure you scrape down the side of the bowl while mixing.) When you think you are done, go a little longer! Add eggs and vanilla. Add flour mixture and mix – be sure to not over mix or your cookies will be tough). Add chocolate chips and/ Snickers. Drop round tablespoons of dough onto a greased cookie tray and bake.
Comments:
From Kathy Sellig who became Kathryn Williams, an incredible mother of 4 and lawyer who managed to get a Presidential pardon for one of her clients – pro bono. I also have to say – the world can always use an extra chocolate chip cookie recipe.
* I remember imitation vanilla extract. I laugh at that now, but then again, sometimes things are hard to come by and you do what you must with what you have.
