Ingredients:
- 3/4 C uncooked macaroni (try whole wheat for a change?)
- 3/4 C soft bread crumbs made from fresh or slightly stale bread
- 2 T of butter
- 1/2 lb (about 2 C) of grated cheddar cheese
- 1 & 1/4 C hot milk
- 1 small onion finely chopped
- 1/4 C chopped fresh parsley
- 2 eggs, beaten
- 1/2 tsp salt
- sharp mustard to taste
- paprika to taste
Directions:
Cook the macaroni. In a large bowl combine bread crumbs, butter, and cheese.
Pour in the hot milk. Add the onion, parsley, and salt. At this point taste. If the sauce is not flavorful or cheesy enough, adjust by adding more of what you want. Maybe more mustard?
Add the beaten eggs then the cooked macaroni.
Pour into a well-buttered baking dish. Sprinkle with paprika.
For best results let sit for 10 minutes or so before eating.
Oven Temp: 350
Time: 30 mins or until firm, hot, and bubbly
