Ingredients:
- 1 lb shredded veggies (about 6-7 cups – play with cabbages, carrots, bell peppers, snow peas, broccoli)
- 3 scallions – sliced
- 1 C cilantro (Italian parsley or mint) chopped
Dressing
- 3 T olive oil
- 1 T toasted sesame oil
- 1/4 C brown rice syrup, honey, or agave
- 1 T soy sauce or braggs
- 1 garlic clove, finely minced
- 1 T ginger finely chopped
- 1/2 tsp salt
- tsp chili flakes or paste
- garnish with sesame seeds, crushed cashews or peanuts
Directions:
Toss slaw ingredients together in a large bowl. Add cilantro and scallions. Whisk dressing ingredients in a small bowl. Pour over slaw. Toss. Garnish. Enjoy.
