Ingredients:
- 1 bag (14 oz) of sweetened coconut flakes
- 2 egg whites
- 1/2 can of sweetened condensed milk
- 1/4 tsp salt
- 1/2 tsp almond extract
- chocolate chips
- coconut oil
Directions:
This is so much better with just egg whites. I didn’t think it mattered. It does. Put the chocolate chips and coconut oil aside. Mix the rest of the stuff up and plop onto baking stone or greased or parchment paper lined cookie sheet. Bake.
While baking, add a large handful of chocolate chips and approx. a small spoonful of coconut oil to saucepan or microwave safe container. Stir until melted. While cookies are cooling, plop or drizzle the chocolate on top. Cool the rest of the way. Enjoy.
Oven Temp: 325
Time: 25 mins or until flakes are golden

Originally from a bag of cheap coconut flakes. I’ve adjusted it so it is easy to remember. Double the recipe if you don’t want sweetened condensed milk hanging around in your fridg. I used a whole can one year in this same recipe. It was fine, but a little drippy. 3/4 can would work well too.
If for some reason you need some ideas about what to do with extra melted chocolate – do my favorite thing and poor over pretzels or dip strawberries in it. I used to try to dip the cookies in the chocolate. It was not worth the effort. Chocolate dollops on top tend to work out best. I don’t try to dip the cookies in the chocolate and put back on the parchment. That’s never worked for me.
