Cheesy Mashed Potatoes

Ingredients:

  • 6-8 C mashed potatoes made to your preference (don’t judge the box of instant potatoes! I work for a living.)
  • 1 8oz pkg cream cheese (room temp)
  • 1 onion, chopped
  • 2 eggs, beaten
  • salt and pepper to taste

Directions:

Grease a 9 x 13 pan. Mix mashed potatoes, cream cheese, chopped onion, and beaten eggs. Stir well. Add salt and pepper. Spoon into the pan. Bake.

Also good with chopped pimentos and green peppers and/or with a can of those yummy French Fried Onions over the top.

These were once called Suzanne’s Famous Potatoes, before that they were Sara’s Famous Holiday Potatoes, and often they’re called the Jaffe’s Famous Potatoes. We call them Cheesy Mashed Potatoes and throw in fresh garlic sometimes. They aren’t just for mashed potato type holidays, and experimentation is easy with this one. Generally, one can’t go wrong with mashed potatoes anyway so have fun with them! One thing is consistent and for sure – potatoes from this recipe become Famous whenever people try them for the first time.
