Ingredients:
- 1 1/2 C butter
- 2 C sugar
- 1 Tbps grated orange peel
- 2 tsp vanilla
- 3 1/4 C flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 C dried cranberries
- 1 1/2 C sweetened flaked dried coconut
Directions:
beat butter, sugar, orange peel, and vanilla till smooth. Mix flour, powder, and salt. Add to base and mix until smooth. Add cranberries and coconut. Looks like crumbs and like it will never work. Just squeeze into balls and drop onto greased cookie sheet. Bake.
If you are looking for that traditional golden around the edges look – you’ll have Coconut Cranberry Crunch Cookies, not chews. Either is fine, but our family prefers the chewy version. So if you’d like that – pull from the oven just before you see the golden edges.
