Curried Chicken on Brown Rice

Ingredients:

  • 1/2 C chopped yellow onion
  • 1/2 C chopped celery
  • 2 Tbls. oil
  • 1/4 C stone-ground whole wheat flour
  • 1 3/4 C chicken broth ( one 14 1/2 oz. can)
  • 2 C cubed cooked chicken
  • 1/4 C tomato juice
  • 1 tsp. Worcestershire sauce
  • 1-2 tsp. curry powder
  • salt to taste
  • 2 C brown rice

Directions:

Combine the onion, celery, and oil in a medium nonstick skillet. Stirring constantly over medium heat until softened, about 3 minutes. Add flour and stir 1 min. Add the broth and continue to cook and stir until the mixture bubbles and is thickened. Add the chicken, tomato juice, Worcestershire sauce curry powder and salt. Still stirring, cook for 3 minutes more to allow flavors to blend. Serve over brown rice.
