Hummus

Ingredients:

  • 1/2 C chickpeas (a.k.a garbanzo beans. cooked or canned)
  • 1-2 cloves garlic
  • 1/2 tsp. salt
  • dash of tamari or soy sauce or Braggs
  • juice of 1 lemon
  • 1/2 C tahini
  • 1/4 C chopped fresh parsley
  • 1/4 C minced scallions
  • black pepper and cayenne pepper to taste
  • 2 Tbls.sesamee seeds

Directions:

Whirl in a food processor for 1 minute or chop in a blender and then mix in a bowl.  Chill or enjoy room temp with pita or veggies or as a spread on a sandwich or wrap. So yummy.

From the Cabbagetown Cookbook. This is a complete protein and sesame seeds are a good source of calcium. We’ve been missing the Black Bean Hummus from our local Good Food Store so I’m going to try this with black beans instead of chickpeas and let you know how it goes. My friend Amy makes the best ever Beet Hummus.
