Mexican Bean Dip Pizza Platter

Ingredients:

  • 1 can refried beans
  • 1 jar nacho cheese
  • 1 jar salsa
  • 1 small container or sour cream
  • 1 C shredded cheese
  • chopped tomatoes
  • chopped black olives
  • chopped onion

Directions:

Spread the beans on platter and heat in oven or microwave. Layer and spread the other ingredients on top then heat again until cheese is melted. Serve with tortilla chips.

Kathy asked me to put this one in the original cookbook. I learned it from Heather Mirczak from Camp Chingachgook.  For variations, add a can of chopped chilies, come chopped, tomatillos, or try different kinds of cheeses (think pepper jack!) and salsas. I also experiment with the amounts of the basic ingredients based on what’s available.
