Ingredients:
- 1 lb chicken
- 1 Tbls. flour
- salt and a pinch of pepper
- cooking oil
- 1 Tbls. butter
- 1/2 lb sliced mushrooms
- 1/4 C dry white wine
- 1/4 C chicken broth
- 1/4 tsp. rosemary
- 1/4 tsp. dry thyme
- 1/4 tsp. tarragon
- 1/2 tsp. garlic powder
Directions:
Pound chicken to 1/2″ thickness. In a shallow dish combine flour, salt, and pepper. Coat the chicken with the flour mixture. Heat oil and butter in a large skillet on medium heat. Add chicken and cook for about 4 minutes on each side.
Remove chicken and keep warm. In the same skillet, add mushrooms, wine, broth, and seasonings. Cook for about 4 minutes. Pour over chicken and serve.
