Chilies Eggs Puff

Ingredients:

  • 10 eggs
  • 1/2 C flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 16 oz. carton cottage cheese
  • 1 lb. Monterey Jack cheese, grated
  • 1 stick butter, melted
  • 1 or 2 cans chopped chilies

Directions:

Preheat oven to 350 degrees. Beat eggs until light. Add all other ingredients, except chilies. Blend until smooth. Stir in chilies. Pour mixture into a well greased 9×13 pan. Bake about 35 minutes or until top is brown and center is firm. Garnish with additional chilies, salsa, and sour cream. Freezes well and flavor enhances on the 2nd or 3rd day.
