Citrus Bundt Cake

Glaze Ingredients:

  • 1/4 C butter, melted
  • 2/3 C sugar
  • 1/3 C orange juice
  • 1 tsp. fresh lemon or orange zest

Directions:

Combine butter, sugar, orange juice, and zest in a small sauce pan. Stirring constantly, cook over medium heat until sugar is dissolved.

Cake Ingredients:

  • 1 package Lemon Cake mix
  • 1 3.5oz. instant vanilla pudding mix
  • 4 large eggs
  • 3/4 C orange juice
  • 1/2 C vegetable oil
  • 1 Tbsp. lemon zest
  • powdered sugar for dusting

Directions:

Preheat oven to 350. Combine mix, pudding mix, eggs, orange juice, vegetable oil, and lemon zest together and mix until well blended. Pour into prepared pan. Bake until 55-60 minutes.

Using a fork poke holes into cake every two inches or so. Pour glaze over cake while the cake is still warm and in the pan. Allow cake to cool complete before turning cake out of the pan. Dust with powdered sugar.

Comments:

This came off a box of cake mix from Western Family. Like other box recipes from a food company, all the ingredients are supposed to be from that company. Hilarious. I was laughing about it and Micah asked me why I’d use a foolish recipe. I told him, “the thing is, these companies put effort into making good recipes and this one will be yummy if I just laugh at the words Western Family in front of every ingredient and use what I have on hand.” And sure enough Micah saw and tasted the truth to my words.
