Chocolate Peanut Butter Bars

Ingredients:

  • 1 C peanut butter
  • 1/8 tsp vanilla/li>
  • 1 large handful chopped almonds(optional)/li>
  • 1/2 C powdered sugar
  • 1 C chocolate chips
  • 1 tsp coconut oil

Directions:

Microwave/melt the coconut oil and chocolate chips until easy to stir. Save about 1/3 to spread thinly over top at the end. Spread 2/3rds into a silicon bar maker or onto parchment paper on a cookie sheet (try some cookie cutters to hold shapes!). Put in the freezer until hard (about 15-20 mins). Mix the peanut butter, nuts, vanilla, and powdered sugar. Spread over the hardened chocolate and then spread the remaining chocolate over the top and put back into the freezer for another 10-20 mins.

We’re still perfecting perfection, but we recommend you try sprinkling with a little kosher salt before that last freezer session and play with quantities. We invented this while making some Granola Bars/Balls. Micah wanted chocolate granola bars and I told him about this Evil Peanut Butter Squares and thanks to the Great and Terrible Corona Quarantine of Early 2020, we didn’t have graham crackers. Necessity is the mother of invention.
