Asian Slaw

Ingredients:

  • 1 lb shredded veggies (about 6-7 cups – play with cabbages, carrots, bell peppers, snow peas, broccoli)
  • 3 scallions – sliced
  • 1 C cilantro (Italian parsley or mint) chopped

Dressing

  • 3 T olive oil
  • 1 T toasted sesame oil
  • 1/4 C brown rice syrup, honey, or agave
  • 1 T soy sauce or braggs
  • 1 garlic clove, finely minced
  • 1 T ginger finely chopped
  • 1/2 tsp salt
  • tsp chili flakes or paste
  • garnish with sesame seeds, crushed cashews or peanuts

Directions:

Toss slaw ingredients together in a large bowl. Add cilantro and scallions. Whisk dressing ingredients in a small bowl. Pour over slaw. Toss. Garnish. Enjoy.

Keeps for 3-4 days!
