Ingredients:
- Potatoes
- melted butter or extra virgin olive oil
- salt
Directions:
Poke potatoes and place on a rack in the oven at 450. We put a cookie tray under the rack to catch drips. After 25 minutes pull out and brush with melted butter or olive oil and sprinkle with course Kosher salt. Bake for another 20 minutes.
Comments:
Enjoy these with sour cream, chives, salsa, butter, bacon bits, chili, or whatever. Ari says to add the oil and salt before baking and place individual potatoes in tin foil so they get steamed. Those without tin foil have a more crispy skin at the end of baking. Basically, you can’t go wrong!
