Ingredients:
- 1 package (10 oz.) frozen chopped spinach, thawed, drained
- 6 C cooked rice
- 1/2 chopped onion
- 1 tsp. salt
- 1 tsp. curry powder
- 1 C milk
- 2 eggs beaten
Directions:
Mix all ingredients. Spoon into buttered 2 1/2 or 3-quart casserole dish. Bake uncovered at 350 until set, 30-40 minutes.

From Sara Sellig. This has a tip about preparing it and holding off cooking it, leaving it in the fridge for a day and then cooking before serving. I find stuff like this interesting and helpful for getting dinner out prior to a family meltdown due to hunger.
