Sweet & Sour Chicken

Ingredients:

  • 4 Chicken breast, boneless & skinless
  • 1 envelope Lipton onion soup
  • 1 bottle of Russian salad dressing (see comments if you are west of the Mississippi)
  • 12 oz. apricot preserves

Directions:

Mix together soup mix, dressing, and preserves. Pour over chicken in a 13 x 9-inch baking dish. bake uncovered at 325 for one hour. Serve over rice.

From Sara Sellig who says, “if you can’t find Russian dressing, buy Thousand Island dressing and add 1 tsp. Worcestershire sauce and 1 Tbls. horseradish.” This is big for those of us who live in the no Russian dressing zone.
