Vegetarian Chili

Ingredients:

  • 2 Tbs vegetable oil
  • 2 onions chopped
  • 4 cloves of garlic finely chopped
  • 2 peppers – any color – chopped
  • 2 celery stalks chopped
  • 1 Tbs butter
  • 2 Tbs cumin
  • 1 Tbs coriander
  • 1/4 tsp cayenne
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp dill
  • 1/2 tsp black pepper
  • 2 tsp salt (can use less if cashews are salted)
  • 36 oz canned beans black, kidney, whatever
  • 32 oz canned tomatoes
  • 1/2 C cashews
  • 2 tsp red wine vinegar

Vegetarian Spanish Paella

Ingredients:

  • 6 C chicken broth, canned or homemade
  • 1/2 tsp. crumbled thread saffron
  • 8 Tbls. olive oil
  • 1 medium zucchini, quartered, & diced in 1/2-inch cubes
  • 1 medium summer squash, prepared same as zucchini
  • 2 medium bell peppers, chopped
  • 6 large shiitake or other mushrooms, trim the stems and chop coarsely
  • 1/2 C frozen or fresh peas
  • 8 medium scallions, coarsely chopped
  • 4 ripe tomatoes diced
  • 1 large yellow onion diced
  • 2 carrots, peeled and diced
  • 3 celery stalks, peeled and diced
  • 4 garlic cloves minced
  • 2 Tbls. minced parsley
  • Kosher or sea salt
  • 3 C imported Spanish or Arborio short grain rice

Wild Mushroom Soup with Sherry

Ingredients:

  • 8 Tbls. butter – 1 stick room temp.
  • 2 C sliced celery
  • 1 C sliced shallots
  • 3/3 C chopped onion
  • 3 garlic cloves minced
  • 3 C sliced stemmed fresh shitake mushrooms (6 oz.)
  • 3 C sliced stemmed fresh crimini mushrooms (about 6 oz.)
  • 3 C sliced stemmed fresh oyster mushrooms (about 4 1/2 oz.)
  • 1/2 C dry white wine
  • 1/2 C dry sherry
  • 1/4 C all purpose flour
  • 8 C chicken stock or canned low salt chicken brother
  •  1/2 C whipping cream

Apple Crisp

Ingredients:

  • 6-10 Apples – cored and chopped small
  • 1/4 tsp or so of Cinnamon
  •  1 & 1/2 tsp Lemon Juice

Topping Ingredients:

  • 3/4 C old fashioned oats (quick oats isn’t as crispy)
  • 3/4 C Brown Sugar
  • 3/4 C Flour
  • 1/2 tsp Cinnamon
  • Pinch of salt (or not if using salted butter)
  • 1/2 C cold butter cut into small cubes

Carrot Cake

Ingredients:

  • 1 lb bag of carrots cooked and mashed and cooled
  • 3 C flour
  • 2 C sugar
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 1/2 C Crisco oil
  • 4 eggs
  • 1 C chopped nuts
