Ingredients:
- 2 Tbs vegetable oil
- 2 onions chopped
- 4 cloves of garlic finely chopped
- 2 peppers – any color – chopped
- 2 celery stalks chopped
- 1 Tbs butter
- 2 Tbs cumin
- 1 Tbs coriander
- 1/4 tsp cayenne
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp dill
- 1/2 tsp black pepper
- 2 tsp salt (can use less if cashews are salted)
- 36 oz canned beans black, kidney, whatever
- 32 oz canned tomatoes
- 1/2 C cashews
- 2 tsp red wine vinegar
